Overview

Vancouver Island Brewing and Ile Sauvage Brewing Collab- Mystic Dry-Hopped Sour Review

The number of Southern Resident Killer Whales is at a 30 year low with only 73 alive on the planet today. One serious threat to their continued survival, beyond chemical contaminations and marine noise, is food source. Unlike transient Killer Whales which eat marine mammals, SRKW’s only food source is salmon but particularly Chinook salmon. Enter the great folks at the Pacific Salmon Foundation and their ongoing efforts to help maintain and encourage salmon stocks. Vancouver Island Brewing and Ile Sauvage Brewing are supporting the PSF by donating $1 from every Pod Pack sold.

Mystic is a dry-hopped yellow/gold sour with moderate white head. The aroma has apricot, honey and fruit acidity, nice floral and fruity hops and a hint of yogurt-like sourness. The mouth feel is a lovely crisp dryness with a burst of lively carbonation. The palate is soft tartness, less than other Ile Sauvage sours. Mystic also has apricot and other stone fruit flavours and a definite but likable funkiness. It finishes well with a clean tartness.
