Persephone Brewing Co.- Red Table Saison Review

One of the many great things about brewery taprooms is the taproom exclusive. Good breweries learn to use taprooms like an informal focus group. Regulars will know that making a bit of a fuss over a beer often means that a taproom one-off might be back for another go around. Industry stories of supposed one-offs being so popular with the locals that the beer ends up in regular production are endless. So the next time you have a taproom exclusive that you love, go ahead and make a fuss.

One beer that locals should be making a fuss about is the Red Table Saison by Persephone Brewing. This taproom exclusive was reddish brown with a billowing tan head. There was a mild peppery saison yeast aroma with notes of biscuit, orange and open, sunkissed grainfields. Typical to saisons, this beer had a dry, light body which was quite crisp, and was nicely carbonated. It was prickly on the mouthfeel. Yeast derived spiciness is forefront on the palate with peppercorns, rustic biscuity grains and citrus fruit. There was the characteristic dry finish with an aftertaste that was quite spicy and a touch bitter.
