This is the second of a possible series of sour beer collaborations with Foamers Folly Brewing Co from Pitt Meadows, BC and Gillespies Fine Spirits in Squamish BC . For the release party of this beer a beer cocktail was served with the blend of the two. Brilliant idea!

Foamers Folly Brewing was inspired by Gillespie’s Fine Spirits Raspberry Gin, that used local BC berries as well as locally foraged botanicals.  The desicion was to continue on with this local theme by adding spruce tips as well as spruce tipped infused Cascade hops to create a citrusy,sour and balanced ale.

This beer pours an amber colour with a light off white head that lingers on right to the last sip.The aroma and flavour is all about the raspberry, but with that second and third sip the citrus and spruce notes comes through. While there is a light puckering mouthfeel,this sour ale is quite drinkable,on its own, or yes, used as a cocktail!
