Spinnaker’s Brewery – Ciel De Nui Dark Sour Ale Review
Aged in French Oak the Ciel De Nui is a new Dark Sour Ale from Victoria’s Spinnaker’s Brewpub. This beer has 7.0% alcohol and a modest 30IBUs. Pouring the beer from the bomber bottle it appears as a dark, cloudy reddish-brown colour with two fingers of quick to settle head. An aroma of sharp, sour cherry and oak comes from the beer in a deep and complex manner. One thing is sure from the nose of the Ciel De Nui, this is going to be a big one. Tasting the beer the sour tones are not as sharp as you may expect. A light sour flavour can be found early on which melds into a strong oak flavour. The oakiness cuts the sour tones drastically and makes for an extremely dry finish. The aroma here was slightly misleading – the Ciel De Nui is 100% a Sour Saison but is much more drinkable than the smell insinuated. The biggest flavour here is actually the Oak tones that cut the sour and give the dry finish.
