Persephone has come up with a few different twists on the IPA style but they have now bottled a classic northwest IPA. The Persephone India Pale Ale is a colour of amber with two fingers of heavily lacing head. From the thick head comes a piney-citrus hop tone in the spitting image of what you expect from a true northwest style IPA. A touch of malt base adds body to the already delicious smelling beer. The body is smooth and full while remaining light on the tongue. A citrus and pine flavour along with a solid malt tone makes for a balanced, and not overly-bitter IPA flavour. The hops are definitely there but the bitterness plays second fiddle to a delicious piney yet mellow flavour and well balanced body. The Persephone IPA is a true BC India Pale Ale that won’t offend the palates of the less than IPA inclined.
