Dageraad Brewing has doubled the size of its barrel aging program in the past couple of years, and this month we’ve brought to you not one but three specialty releases. Last round, we reviewed Dageraad Entropy No. 20: Bière de Coupage. This time, we’ve got an interesting creation with the unlikely monier “Cognac n’ Brett”.

This Belgian-style blonde ale is, as you’ve gathered, aged with brettanomyces in cognac barrels. But just in case you didn’t fully appreciate the marketing name they bestowed upon this ale, it essentially summarizes as “Wine ‘n Bacteria”. Sounds irresistable! Let’s tuck in.

On the nose, there is a strong wine barrel aroma alongside classic Belgian bubble gum esters.

There’s an enjoyable spicy bite on the palate, but with a mitigating smoothness. There’s a fruit note with pear coming through, as well as dark honey / brown sugar.

Unlike some strong barrel-aged beers, the flavour isn’t overwhelming for a casual drinker. So considering the massive ABV digits, this is actually quite the easy beverage to consume.

There’s more to this beer than just alcohol. It’s not going to give you a rainbow of complex flavours, but it will give you a few strong flavours that comprise a multifaceted experience.
