Townsite Brewing has released the Bois Sauvage as their Assemblage #1 limited release beer. This beer gives no inclination as to what it is on the paper wrapping which conceals an unlabeled bottle. Pouring from the 500ml bottle the beer is a hazy-golden colour with two fingers of head. The aroma is rich with a sour-wild yeast character and wheat/Belgian yeast character. On the nose this appears to be some variant on a wild saison. The flavour is lightly sour with a barnyard-Brett character that comes along side a mellow tropical fruit character and wheat undertone. There is also a mellow oak character to round out the mix. The beer is balanced and quite delicious giving the best of wild yeast, sour character and saison-esque flavours. This is a beer that is worth trying.
