Mission Springs Top Knot IPA BottleMission Springs Brewing Company – Top Knot IPA Review

Where some may deride the famed ‘man-bun’ or ‘top-knot’, the Mission Springs has chosen to celebrate the hairstyle by naming their newest IPA after it. The beer pours from the bomber bottle a clear and dark golden colour with two fingers of off-white head that leaves good lacing on the glass and lasts for a significant amount of time. Pine aromas dominate but are accompanied by floral hop aromas such as bergamot. Some tropical fruit and citrus aromas are present as well, although they are subdued. The flavour is bready and initially fruity, but these flavours are quickly overpowered by resin and floral hop notes. A heavy bitterness sets in that stays in the mouth for a while. This powerfully-flavoured beer still presents a light body that makes it very quaffable especially as it warms up slightly.
