Railtown’s Postmark Brewing Company has brewed up an IPA using the Australian hop varietal Ella. As the first in Postmark’s Experimental IPA series be beer pours from the bomber bottle a golden colour and is topped with two fingers of head. Smelling the beer it has tropical fruit notes of citrus and grapefruit along with a mellow spice. The Ella hop gives a similar, but less intense, aroma to the Galaxy hop. The Ella IPA has a citrus-bitter bite that comes in early and lingers. The citrus character is quite strong and the bitterness builds in some intensity. At 52 IBUs and 5.9% alcohol the bitterness factor is bigger than you may expcet. That said, a mild sweetness and citrus hop-kick adds balance along side. This beer is a great representation of the Ella hop and the citrus forward flavour that it offers.
