Persephone Brewing Company has stepped into the slow-to-brew beers with the Gibsons “B” Pilsner. In bomber bottles this “Certified B Corporation” beer as a colour of golden straw and is very transparent. Two fingers of very loosely packed head tops the glass and leaves light signs of lacing behind. The Gibsons B has a light aroma of malt, citrus and grass. From the aroma this appears to be a very approachable and light Pilsner. The taste starts off with a strong carbonation and bigger than expected body. The malt tones have a bit more of a sharpness than you may expect and the hop cone that is on the label should be taken as forecasting. The biggest flavour in this Pilsner is the hop bitterness that jumps in early and lingers to the last waking moment. A lightly sharp and rather bitter hop tone takes charge of this beer making it a rather bitter and BC-twisted Pilsner.
