The wax top tells it all with the Persephone Brewing Company’s Barley Wine. At a formidable 11.9% alcohol this is a very age-able beer which will likely improve with time. As the strongest beer to come from Gibsons BC’s Persephone Brewery this big brew pours as a deep, slightly cloudy chestnut colour. The head is slow to emerge as you pour but through the thick body it erupts with three beautiful fingers of dense, lacing head. The aroma coming from this Barley Wine is rich with caramel, biscuit notes and a barley-wine sharpness. Despite this sharp attribute a creaminess and softness do make themselves known in the aroma. The flavour is big and very intense. A massive body grabs hold of the palate and does not let go. The thick body and creamy texture opens up with flavours of caramel, molasses, biscuit and a kick of alcohol. Bigger than your typical Barley Wine this is not a beer to be underestimated. That said the thick and creamy texture of the beer adds a sense of drink-ability to the brew and makes for a surprisingly enjoyable beer. Curl up by the fire and enjoy this strong, intense and very delicious winter brew.
